Homemade Protein Bars

I'm always scouting out more snacks for my kids that I can feel good about.  Plus, I love recipes where I can use up all those random leftovers bags of dried fruit, nuts, chocolate chips, etc.  Two no-bake snacks that have done that for me so far are Power Ball Cookies and Homemade Clif Kid ZBars.  They are two of the most popular recipes on my site, if you haven't tried them.  Here's yet another in the same vein:  healthy Homemade Protein Bars.  These bars taste like a Reese's Peanutbutter Cup to me--minus the bad stuff!

  2. Kids loved them...especially the chocolate covering on top, of course. Nathan didn't try them. He's not a huge no-bake fan, except for the Power Ball Cookies. (Thanks again for that recipe--2nd most popular one on my blog.)

  3. I made the bottom half of these tonight... nothing like a reese's cup... more like an almond joy to me. :) I told the kids we were making homemade candy bars, but they didn't eat their dinner, so the top still isn't done. I'll do it tomorrow and let them try it for snack.

    I didn't bother Kev with it because he doesn't like a lot of nutty things... I think Snickers is about the only thing he eats with nuts. :) Plus he doesn't really like coconut and mine had a lot of coconut flavor.

    I was thinking earlier that maybe if we just add chocolate chips or a chocolate bar or something to the mixture, it would save a step? Or melting it with the butter/coconut oil and putting it in during that step? Just trying to think of a quicker way they would be done.

    I'll be experimenting with this one for sure! :) Thanks!!

  4. Carla, I like that idea of melting the chocolate in with the coconut oil. Then, my kids won't be tempted to just pull off the topping and leave the bottom, either!

  6. If I calculated this correctly there are 176 grams in the whole recipe. If you divide it into 12 bars, that's about 15 grams per bar. Hope that helps! Btw, I love your blog and your recent post about "divine interventions".
