I'm not sure Mac and Cheese can ever be categorized as "healthy." But, since my kids love it so much, I've attempted several better versions--than Kraft or the decadent homemade version that is. I made one for lunch today that was quite good. What isn't when you add enough cheese?!? Our whole family votes for this one again. Of course, I like it because it's yet another way to get vegetables into my crew. Sorry that I don't have pictures. We ate it before I remembered to pull out the cam!
A Better Mac & Cheese
1 pound whole wheat elbow macaroni (or any other kind of pasta)
1 large sweet potato, microwaved or baked until soft
2 cups lowfat milk
1 cup grated cheddar cheese (could use reduced-fat)
1 cup grated mozzarella cheese
1/4 cup plus 2 tablespoons freshly grated Parmesan, divided
1/2 cup low fat sour cream
2 teaspoon salt
2 teaspoon powdered mustard
1/2 teaspoon garlic powder
1/4 teaspoon black pepper
1/4 teaspoon dried parsley
1-2 pieces whole wheat bread, pulsed in food processor to make crumbs
Italian seasoning, enough to sprinke over top
2 tablespoons freshly grated Parmesan
1 teaspoon olive oil
Preheat the oven to 375 degrees F. Coat a 9x13 baking pan with cooking spray (or two 8x8 and freeze one for later).
Bring a large pot of water to a boil. Add the macaroni and cook until tender but firm. Drain and add back to pot.
Meanwhile, place the sweet potato flesh and milk into a large saucepan and cook over a low heat, stirring occasionally and making sure sweet potato is smashed and fairly smooth. Turn the heat up to medium and cook until the mixture is almost simmering, stirring frequently so it doesn't scorch. Remove the pan from heat and stir in the cheddar, mozzarella, Parm, sour cream, salt, mustard and pepper, Parsley, and garlic powder. Stir until mostly melted and smooth. Pour cheese mixture over the macaroni and stir to combine. Transfer the macaroni and cheese to the baking dish.
Combine bread crumbs, Parmesan cheese and oil in a small bowl. Sprinkle over the top of the macaroni and cheese. Sprinkle the top with a little Italian seasoning. Bake for 20 minutes, then broil for 3 minutes so the top is crisp and nicely browned.
I may try this; thank you for sharing. I've been interested in finding a somewhat "healthy" version of mac 'n cheese that's not out of a box.
